OK I've been out of the hobby for about 12 years and from what I remember the Deore LX stuff was one of the high end back then... does this still apply? What are the worst to the best Deore gears / brakes?
(Ive just ordered a kona blast 2007 model and am not sure what deore gear it comes with)

Best depends on what you’re looking at.
Shimano line for mtb goes like this, with the top being the highest:
XTR
XT
LX
Deore
Alivio
Acera
Altus
Sometimes XT and LX have the Deore in front, so it is Deore LX and Deore XT.
That guy who listed out the shimano parts is right. You can get the higher models like XT and XTR with a special feature where there is just one lever for breaks and shifting. You pull up to shift up, down to shift down, and in to break. My dad has those and likes them. I have some old school shimano V-break shifters hooked up to my disks and they seem to be more reliable and smooth than the really expensive stuff, though.
Just plain "Deore" is good, Deore LX is great, and Deore XT is waaaayyyy great. Then you have XTR which is the top of the line for Shimano and priced as such.
A lot of bikes will come with a LX front derailler, XT rear derailler combo. If you can get that, then you have a really solid component set.
The LX and XT cranks are usually reserved for the $1500 and up bikes.
Be well advised that in 2009 Deore LX will disappear and be replaced with Shimano SLX. LX as a group will continue, but for trekking type bikes.
LX is top notch, in my opinion. XT is great if you can afford it. LX is ‘workhorse’ stuff and basically goes ‘forever’. In fact I sold a set of LX brakes, maybe 10 years old on e bay last month, they still rocked, no fuss! XT looks nicer but if you’re on a budget LX every time
