all mountain will have better suspension IE the travel on the forks to absorb large jumps and rock also be a strong frame,
Cross country will have less need for large travel forks as made for small rocks gravel etc.
take a look a Decathlon bikes good and cheap.
I have the hard tail fantastic for the money,
the do a nice full sus if needed,
"All mountain" bikes have longer travel (between 5" and 6") suspension on the rear and typically have coil shocks on the front.
"Cross country" bikes are made with shorter travel and softer suspension to take the edge off of longer and less demanding trail riding. They tend to be much less expensive than AM bikes and use older technology- but not always.
a cross country bike will have a STIFFER suspension set up than an all mountain bike. often an air shock to lower weight, and will have a longer cockpit area. (For a "racier" and more efficient riding position.) Example: Trek Top Fuel series bikes.
An AM bikes weight will also be placed further back over the rear wheel to aid the riding of steep terrain. a perfect example being the Marin Attack Trail.
All mountain is a bike that can climb well but is more apt to desending they have about 6 in of travel and weigh 30-34 pounds XC bikes have about 3 in of travel and are not good for desending they weigh about 25 pounds
